Mother's Day is Sunday, May 14 so it is time to think of fun things for that special mom. If your mom is like my mom or like me, it doesn't need to be an expensive gift. To be honest, a fresh made Strawberry Pie or a Coconut Cream Pie is all that I desire on Mother's Day and a quick 'I love you, mom' will work, too. Here is  my mom's Strawberry Pie recipe. The best one in the world. Like all Strawberry Pies, no matter who makes them, the are always good. However. My mom put a very special touch on the shell and on top of the Strawberry's to make it taste amazingly better than most.

Her pie crust was made just like another pie crust, until it was time to cook. Right before she finished kneading it, she would sprinkler a combination of cinnamon sugar in the last knead.

My moms pie crust was simple, 2 cup's flour, 1 cup butter, 4 tablespoons sugar.

knead that together and then put my mom's special touch on it, right before you cook it.  Split the dough in to two balls. Roll out one ball and make it the crust in the bottom of the pan.  The other one you will roll out and then get cookie cutters to form shapes. I usually got the flower cookie cutters, heart shaped cookie cutters and I would also try to make M. O. M. out of it. She loved it, better my M's were never very good. But, it is the love that counts right?

Place the cut out shapes on a cookie sheet as if you were cooking cookies. Bake both pie crust and pie crust cookies at 350 degrees for 13 minutes. Do not over cook.

Take out of the oven and with my moms cinnamon sugar mixture, sprinkle some on right when it is out.

Strawberry Glaze Recipe:

This is so easy and it is almost the same for everyone's glaze. Strawberry Jell-O Gelatin is the best. It gives it that extra Strawberry taste that you will love.  3/4 sugar, 2 1/2 tablespoons corn starch, 1 1/3 cups bowling water, and two tablespoons butter. Mix all ingredients except butter and water,  first in a pot and then add the bowling water. Cook until glaze is thickened. I use a wire whisk or a fork. Stir constantly. Do not over cook this either. Now add the butter and stir until it is melted. Set that aside and let cool.

Cut 25 fresh Strawberry's for your master piece. My mom would sprinkler some more cinnamon sugar mixture on top of them. Add the strawberry's to your glaze and mix it up really good. Don't squish the Strawberry's.

Put in your yummy pie shell and spread around. Now you are going to want to take the fun cookie cutter pie shells and place them on the top. See, I told you she was brilliant.

Put in the fridge and cool. Make fresh whipping cream not the frozen stuff ready to put on top. Make it look pretty and put in between the cookie cutter shapes.  My moms last strawberry pie trick was to slice like 5 or 6 strawberry's and put the on top of where she put the whipped cream.

Then, she would cut of pieces of chocolate and put it on top of the strawberry's and sprinkle some all over. Last thing. She would take the cinnamon sugar mixture, the last of it, and sprinkle it all over that. Best strawberry pie ever!
